Maple sap has been drunk for eons and harvested for centuries but it is only now growing in popularity, so you might have a few questions, like these:
Does Maple Water contain maple syrup?
No, Osprey Organic Maple Water is the natural sap collected straight from the maple trees and is not syrupy. Maple syrup is made from the same sap but is concentrated through boiling. We do not add maple syrup or artificially sweeten the Osprey Maple Water in any way.
Is Osprey Maple Water similar to maple syrup?
They both come from maple trees but otherwise they are very different. Maple Water is refreshing, light, clear and comes straight from the tree. Maple syrup is sweet and thick. They are used for different purposes. Maple syrup is a sweetener and fantastic on pancakes. Maple Maple water is a thirst quencher.
Does tapping for maple water hurt the trees?
No. We are particularly careful with our trees using small ¼” holes and only on mature trees. The holes heal over by mid summer. We alternate trees from season to season, similar to how farmers let field lie fallow to regenerate. The trees that we tap grow at the same rate and live just as long as trees that are untapped.
We collect the sap using plastic tubing so we minimize disturbance of the underbrush.
Harvesting the sap provides economic benefits and helps preserve woodland.
When is maple sap collected?
Maple sap is harvested once a year, in early spring, as the temperatures begin to rise. It takes 10 to 15 days and only when the temperature is warm during the day and not much below freezing at night.
How is the maple sap collected?
We collect sap sustainably. The sap is collected using thin plastic tubes where it flows by gravity through a coarse filter. We then transport the sap, filter, pasteurize and pack it within 24 hours. We keep the sap away from the air so the delicate micronutrients are preserved.
Why is Osprey Maple Water packed using Tetra Pak?
Tetra Pak is lightweight compared to glass and has the characteristics needed to preserve the delicate Maple Water. The packaging keeps light, oxygen and microorganisms out which would harm the flavour and cause spoilage. Go here to learn about environmental questions relating to Tetra Pak.
How long can Osprey Maple Water be stored?
Osprey Organic Maple Water has a shelf life of 18 months. It can be stored at at room temperature prior to opening. Once opened, it needs to be refrigerated.
Once opened how long can Osprey Maple Water be kept?
Osprey Maple Water is delicate and without preservatives. It will spoil quickly if not kept cold. Once opened store it in the fridge and use within two weeks of opening.
